WHAT ARE TRUFFLES?
Truffles are "ipogeus" (subterranean) mushrooms with the shape of black or white, compact tubers, very powerful in smell and appreciated in taste.
They belong to various kinds and species among which only 9 sorts are allowed to be sold and consumed; the most commercialized are:

1. Tuber magnatum Pico, vulgarly known as white truffle;
2. Tuber melanosporum Vitt., vulgarly known as "top class" black truffle;
3. Tuber aestivum Vitt., vulgarly known as Summer truffle or "scorzone";
4. Tuber uncinatum Chatin, vulgarly known as Uncinatum truffle;
5. Tuber albidum Pico, vulgarly known as "bianchetto" truffle or"marzuola";
6. Tuber brumale var. moschatum de Ferry, vulgarly known as Muscat truffle;
7. Tuber brumale Vitt., vulgarly known as black Winter truffle or black "trifola".

The most valuable truffles are the Tuber magnatum Pico (Alba* white truffle) and the Tuber melanosporum Vitt. (Norcia** black truffle).
The species can be verified considering the organolectic and botanical characteristics and, in case of doubts, by examining the spores through microscope.
Traffles get harvested in woodland and non cultivated grounds; the harvest is allowed only in periods established from the law, according to the truffle variety. Only people with authorized licenses and trained dogs can harvest truffles.

HOW IS TRUFFLE COMPOUND?
Its composition is:

Water 75%
Proteins 8%
Lipids 0.5%
Glucides 7%
Cellulose 6%
Ashes 2%

Ashes contain big quantities of Iron (Fe) and Iodine (I).

DOES BOSCOVIVO COMMERCIALIZE ITALIAN TRUFFLES?
BOSCOVIVO commercializes exclusively Italian products and only very fresh truffle (daily harvested).
Truffle is accurately chosen according to the size, washed and classified in Super Extra, Extra, 1st Choice, 2nd Choice, Pieces and Crumbs.

HOW TO SHIP FRESH TRUFFLES.
According to the daily orders our personnel prepares the shipments.
Our packings are purposely chosen to grant the thermal insulation inside each box, so that the product remains 48 hours at the same temperature of its natural habitat.

HOW TO KEEP FRESH TRUFFLES?
Fresh truffles keep cool in fridge for few days.
It would be better to wrap them in bottling paper away from fat food (e.g. milk) because lipids absorb quickly the truffle flavour ("truffle cappuccino" hasn't been invented yet!!!).

HOW TO KEEP BOSCOVIVO'S PRODUCTS?
Jars of sauces, creams, meat sauces are sterilized and, till closed, they can be kept for some years.
BOSCOVIVO doesn't use preservatives because utilizes the natural strength of the steam to obtain "time-alive"products.
After opening our jars, they must be kept in fridge and used within a week (this is the confirm that our products do not contain preservatives).

HOW TO KEEP BOSCOVIVO'S DELICATESSEN.
Our delicatessen keep cool and dry. They are shipped in suitable packings to guarantee uniform temperatures till destination.

HOW TO KEEP BOSCOVIVO'S CHEESES.
BOSCOVIVO's cheeses must be kept cool and dry. Our personnel packs them the same day of the shipment in order to keep them cool and fresh.
After opening their vacuum-packing our cheese keeps in fridge no longer than 7 days. A sort of rind will probably form on its surface. This is the natural contact with the open air, a normal ripening process of the cheese.

WHAT'S THE DIFFERENCE BETWEEN THE MINIMUM PRESERVATION TERM AND THE SHELF-LIFE DATE?
The minimum term of preservation is the date until when the product mantains its specific properties in suitable preservation conditions. It should be written as "best before" followed by the date or information where the date is on the packing.
The shelf-life date is instead the last term within the product has to be consumed.
The date can be expressed with:
- date and month for products with less than 3 months-preservation.
- month and year for products which keep more than 3 months but less than 18 months.
- year for products with a preservation of 18 months at least.

WHAT ARE THE GENETICALLY MODIFIED ORGANISM (GMO)?
Genetically modifying an organism means to supply it with a DNA molecule which is now able to produce a protein that before couldn't.

WHICH ARE THE RISKS FOR THE CONSUMERS OF GMO?
Let's examine the possible benefits and dangers coming from the production of GMO.
From a human healthy point of view the main risks are phenomena of toxicity of food, developments of allergies and antibiotic resistance.

DOES BOSCOVIVO USE GMO?
No, because BOSCOVIVO selects accurately its own suppliers and effects controls on raw materials.

HOW WE PREPARE SHIPMENTS?
Small orders are shipped within 24 hours.
All the others coming in the week are prepared as soon as possible and shipped within a week.

HOW WE PACK OUR PRODUCTS?
Packings are studied to avoid every minimum stress to the product, in order to ensure its genuineness to our customers.

HOW ABOUT DELIVERY TIMES?
The delivery time is 24 hours in all Europe or within 48-72 hours for particular areas.

WHICH ARE OUR FORWARDERS?
BOSCOVIVO uses only parcel couriers (DHL, Executive) which are able to grant quick deliveries.

ARE OUR GOODS INSURED?
Our goods are covered by a policy of insurance at our charge.
In case of damage the customer must inform BOSCOVIVO per e-mail (boscovivo@boscovivo.com), fax (0039 0575 410381 or 410849) or telephone ( within Italy: toll free number 800-862004 and outside Italy 0039 0575 410396).
BOSCOVIVO will refund the customer or send him goods in substitution.
